 Cooking emu meat

Emu can be cooked in much the same way as the finer cuts of lean beef. However, because emu meat is low in fat, with a high moisture content, care must be taken not to overcook it. Grilling and stove top cooking should be done at very high temperatures. Cooking time is very short for these types of preparation. Overcooking can result in dryness and toughness. For grilling and stovetop cooking, rare to medium rare doneness generally yields the best results, just as is recommended for fine grades of beef. For slow cooking, an internal temperature of 160 degrees yields excellent results.
