Mama’s Emu Italian Pasta Bake

1 lb. ground emu
1 lg. onion, diced
2 (8 oz.) cans of tomatoes
Salt to taste
Pepper to taste
1/2 tsp. rosemary
1/2 tsp. marjoram
1/8 cup Worcestershire sauce
8 ounces uncooked pasta, macaroni works well
1 (10 oz.) package of frozen corn, unfrozen
1 cup chopped ripe pitted black olives
1 1/2 cups shredded Cheddar cheese
1/3 cup of grated Parmesan cheese

Cook pasta according to package directions. Saute ground emu with onions and garlic until emu meat is brown. Add next six ingredients. Add the remaining ingredients to meat mixture. Spoon into a greased baking dish. Bake at 350 degrees for 20 minutes or until cooked through and bubbly.

Emu meat is a mild flavored meat that accepts most seasonings. It responds well in sauces especially tomato sauces. So for a meal “delizioso,” give this one a try:

Spaghetti Sauce Fabuloso!

1 1/2 lbs. of ground emu meat
1/2 lb. ground emu sausage
1 lg. onion, chopped
1 lg. green pepper, chopped
1 clove garlic, crushed
2 (8 oz) cans of tomato sauce
1 tsp. brown sugar
1 1/2 tsp. oregano
1/2 tsp. basil
1/4 tsp. marjoram
1 (2 oz.) can of mushrooms (if desired)

Brown meat and sausage with onion and green pepper. Add garlic. Then add the next 5 ingredients. Simmer for 45 minutes. Add mushrooms. Simmer another 10 minutes. Serve over cooked spaghetti.
