Featured recipe July/August 2005

Fourth of July Emu Burgers

2 pounds ground emu
2 (1 oz) packages of dry onion soup mix
2 potatoes, washed, peeled and shredded
1 cup Swiss Cheese, shredded
1 cup Mushrooms, chopped

In a medium bowl, mix together the potato, cheese and mushrooms.

In a large bowl, mix ground emu with onion soup mix.  Form into patties.  Make a pocket in each burger.  Stuff with the potato mix and seal

Grill over high heat for 3 minutes per side.  Or broil in oven.

Tip:  Brush grate with oil prior to cooking.
